Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with foil and spray with non-stick cooking spray.
  2. Arrange the trimmed asparagus on one side of the baking sheet and scatter the halved cherry tomatoes on the other side.
  3. Drizzle olive oil over the asparagus and tomatoes, then season with kosher salt and pepper to taste.
  4. Roast in the preheated oven for about 10 minutes until asparagus is tender and tomatoes start to blister.
  5. Carefully remove the baking sheet and sprinkle shredded mozzarella cheese over the roasted asparagus.
  6. Return to the oven and roast for an additional 5 minutes until the cheese is melted and golden.
  7. Transfer to a serving plate, top with roasted cherry tomatoes and fresh chopped basil, and drizzle with balsamic glaze.
