  • 1 teaspoon Ground Ginger or fresh ginger
For the Pineapple
  • 1 cup Fresh Pineapple Chunks or canned
For Cooking
  • 2 tablespoons Vegetable Oil or olive oil
For Garnishing

Instructions
  1. Prep Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper. Set aside.
  2. Heat Oil: In a large skillet, heat vegetable oil over medium-high heat until shimmering.
  3. Sear Chicken: Place the chicken breasts in the hot skillet and cook for about 4-5 minutes on each side until golden brown.
  4. Prepare Sauce: In the same skillet, combine brown sugar, soy sauce, ketchup, garlic, and ginger over medium heat until bubbly.
  5. Add Pineapple: Stir in fresh pineapple chunks and cook for 2-3 minutes.
  6. Return Chicken: Place seared chicken back into the skillet to coat with sauce.
  7. Simmer: Reduce heat, cover, and allow to simmer for 20-25 minutes until chicken reaches 165°F.
  8. Garnish and Serve: Sprinkle with cilantro and serve with extra pineapple sauce.
