Preparation Steps
  1. Combine old-fashioned rolled oats, almond milk, coconut yogurt, and a pinch of salt in a medium mixing bowl. Stir thoroughly until well mixed.
  2. Stir in chia seeds, pure maple syrup, vanilla extract, and lemon juice. Cover and refrigerate overnight.
  3. In a saucepan, cook fresh blueberries, chia seeds, maple syrup, lemon juice, and vanilla extract over low heat until thickened.
  4. In the morning, stir oats, spoon into bowls, and top with blueberry compote and granola before serving.
