Baked Sweet Potatoes Instructions
- Preheat your oven to 400°F (200°C).
- Place the washed and dried sweet potatoes directly on the oven rack. Bake for about 45-60 minutes, or until soft and easily pierced with a fork.
- Carefully remove the sweet potatoes and let them cool slightly for about 10 minutes. Cut each sweet potato in half lengthwise and scoop out the flesh into a mixing bowl, leaving a thin layer inside the skins.
- In the mixing bowl, combine the sweet potato flesh with the butter, brown sugar, and spices. Mix until smooth and creamy, adding salt and pepper to taste.
- Spoon the filling back into the halved skins, mounding it slightly for presentation. Fill generously for a satisfying bite.
- Return the stuffed sweet potatoes to the oven and bake for another 15-20 minutes until heated through and the tops are golden.
- Remove from the oven, let cool for a couple of minutes, and serve warm, garnished with optional toppings.
