Baked Sweet Potatoes Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Place the washed and dried sweet potatoes directly on the oven rack. Bake for about 45-60 minutes, or until soft and easily pierced with a fork.
  3. Carefully remove the sweet potatoes and let them cool slightly for about 10 minutes. Cut each sweet potato in half lengthwise and scoop out the flesh into a mixing bowl, leaving a thin layer inside the skins.
  4. In the mixing bowl, combine the sweet potato flesh with the butter, brown sugar, and spices. Mix until smooth and creamy, adding salt and pepper to taste.
  5. Spoon the filling back into the halved skins, mounding it slightly for presentation. Fill generously for a satisfying bite.
  6. Return the stuffed sweet potatoes to the oven and bake for another 15-20 minutes until heated through and the tops are golden.
