Method
 

Step-by-Step Instructions
  1. Heat a tablespoon of olive oil in a large skillet over medium heat. Add sliced onions and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for 30 seconds.
  2. Stir in thawed spinach and cook for 2-3 minutes. Season with salt and pepper, then incorporate sour cream until well combined.
  3. Preheat oven to 175°C (347°F). Season salmon fillets with salt and pepper. Sear salmon for 2 minutes on each side.
  4. In a greased baking dish, place seared salmon skin-side down. Top with the creamy spinach mixture and sprinkle mozzarella cheese over it.
  5. Bake for 15-20 minutes, checking for doneness at 63°C (145°F). The cheese should turn golden brown.
  6. Allow to rest for a couple of minutes before serving. Plate the salmon and enjoy!
