- Preheat your oven to 400°F (200°C). Gather your ingredients and prepare your baking dish or ramekins.
- Arrange the cherry or grape tomatoes, diced red bell pepper, thinly sliced red onion, minced garlic, and crumbled feta cheese in individual ramekins or in a baking dish. Drizzle with olive oil.
- In a small bowl, mix the dried oregano, thyme, sea salt, black pepper, and red pepper flakes. Sprinkle this over the feta and vegetables.
- Bake in the oven for 25 minutes until vegetables soften and feta is creamy and golden.
- Remove from the oven, stir gently, and fold in the chopped baby spinach.
- Create small wells in the vegetable mixture and crack each large egg into these wells.
- Return to the oven and bake for an additional 10 minutes, until whites are set and yolks slightly runny.
