Cannoli: A Delicious Italian Dessert

Cannoli is a traditional Italian pastry that has become a popular dessert around the world. It consists of a fried or baked pastry shell filled with a sweet, creamy filling made from ricotta cheese, sugar, and sometimes chocolate chips or candied fruit. Cannoli are typically served as a dessert or a snack and are often enjoyed with a cup of coffee or espresso.

Ingredients:
– 1 cup all-purpose flour
– 1 tablespoon sugar
– 1/4 teaspoon salt
– 1 tablespoon unsalted butter, cold and cut into small pieces
– 1/4 cup white wine
– 1 egg, beaten
– Vegetable oil, for frying
– 1 cup ricotta cheese
– 1/4 cup powdered sugar
– 1/4 cup mini chocolate chips
– 1/4 teaspoon vanilla extract
– Powdered sugar, for dusting

Instructions:

1. In a large bowl, whisk together the flour, sugar, and salt. Add the butter and using a pastry cutter or your fingers, work it into the flour mixture until it resembles coarse crumbs.

2. Add the white wine and mix until a dough forms. Turn the dough out onto a lightly floured surface and knead for 5 minutes until smooth and elastic.

3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

4. In a medium bowl, mix together the ricotta cheese, powdered sugar, mini chocolate chips, and vanilla extract until smooth. Cover and refrigerate until ready to use.

5. Heat the vegetable oil in a deep fryer or a large pot over medium heat until it reaches 375 degrees F.

6. On a lightly floured surface, roll out the dough to 1/8 inch thickness. Cut the dough into circles using a 3-inch round cookie cutter.

7. Wrap each circle of dough around a cannoli tube, sealing the edges with a little bit of beaten egg.

8. Fry the cannoli shells in the hot oil until golden brown, about 2-3 minutes. Remove with tongs and place on a paper towel-lined plate to cool.

9. Once the shells are cool, gently remove them from the cannoli tubes. Fill each shell with the ricotta filling using a pastry bag or a spoon.

10. Dust the cannoli with powdered sugar and serve immediately.
