Moussaka is a classic dish that is popular in many Mediterranean and Middle Eastern countries. This hearty casserole is made with layers of sliced eggplant, spiced ground lamb or beef, and a creamy béchamel sauce. It is a delicious and satisfying meal that is perfect for dinner parties or family gatherings.

– 2 large eggplants, sliced
– 1 lb. ground lamb or beef
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 tsp. ground cinnamon
– 1 tsp. ground cumin
– 1 tsp. dried oregano
– 1 can (14 oz.) diced tomatoes
– 1/2 cup red wine
– 1/4 cup chopped fresh parsley
– Salt and pepper, to taste
– 4 tbsp. butter
– 4 tbsp. all-purpose flour
– 2 cups milk
– 1/2 cup grated Parmesan cheese
– 2 eggs, beaten


1. Preheat the oven to 375°F.

2. Lightly salt the eggplant slices and set aside for 30 minutes. Pat them dry with paper towels.

3. In a large skillet, cook the ground lamb or beef over medium heat until browned and no longer pink. Drain any excess fat.

4. Add the onion and garlic to the skillet and cook until the onion is translucent, about 5 minutes.

5. Add the cinnamon, cumin, and oregano to the skillet and cook for 1 minute, stirring constantly.

6. Add the diced tomatoes, red wine, parsley, salt, and pepper to the skillet. Bring to a simmer and cook for 10 minutes, stirring occasionally.

7. In a separate saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Gradually add the milk, whisking constantly. Cook until the sauce thickens, about 5 minutes.

8. Remove the saucepan from the heat and stir in the Parmesan cheese and beaten eggs.

9. To assemble the moussaka, layer half of the eggplant slices in a 9×13 inch baking dish. Top with the meat mixture, then layer the remaining eggplant slices on top. Pour the béchamel sauce over the top.

10. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the eggplant is tender.

11. Let the moussaka cool for 10 minutes before serving.
